Spicy Brown Sugar Ribs with Pineapple Salsa

There is something about the Fall season that drives us to comfort food.  Tonight, we could not decide on what to make for dinner, and the three of us wanted something different.  Now, putting three girls in a kitchen, you can only imagine the beautiful chaos.

I wanted some ribs, my younger daughter wanted cornbread, and my older one opted for a creamy potato soup. The end result was a perfect family night dinner filled with laughter and joy.  Another blessing for this fall season!

My spicy brown sugar ribs were absolutely delicious and of course, I have to share the recipe with you.

Spicy Brown Sugar Ribs with Pineapple Salsa

Ingredients

Ribs

½ cup brown sugar

Salt and pepper

3 tsp Paprika

1 tsp tangy mustard

3 tsp cayenne pepper

2 tsp pepper flakes

3 cloves garlic minced

Zest and juice of 2 oranges

 

In a pan, season the ribs with some salt, pepper, and lemon juice.  Cook them over medium heat, for about 15 to 20 minutes.

In a bowl, mix together the brown sugar, paprika, pepper flakes, tangy mustard, garlic, zest, and the orange juice in a bowl.  Spread over the ribs and toss them until they are coated evenly.  Let them stand for about 1 hour.   Then bake them for 30 minutes in a preheated oven at 375 degrees.

 

Ingredients for the pineapple salsa

1 can of Pineapple diced

1 tbsp honey

1 red onion

About 2 tbsp chopped cilantro

1 jalapeno diced

The zest and juice of one lemon

Mix all the ingredients together and transfer to a serving bowl and set aside.

Remove the ribs from the oven and serve with the pineapple salsa.

  6. I’m not a fan of spicy foods, but I love the idea of a pineapple salsa since pineapple is my favorite fruit. Maybe I’ll try to omit the jalapeno and see what happens.
