Spiced Stuffed Pork Loin

The holiday is over, and we are slowly getting back to our daily routine. Sunday is always special for me as it is the only day where all four of us are home together. For dinner, I made this delicious spiced stuffed pork recipes that one of my friends shared with me.

Spiced Stuffed Pork Loin

 

Ingredients

Pork Loin

4 scallions

2 sprigs of fresh Rosemary, strip the leaves

6 cloves of garlic

1 bunch of parsley

2 cups of white wine

½ cup of water

2 tbsp of extra virgin olive oil

Salt, pepper, and pepper flakes

 

Preparation

Use a food processor to blend the garlic, the scallions, the parsley, rosemary leaves, olive oil, salt, pepper, and pepper flakes.

Slice the pork loin lengthwise on one side.  Make sure not to cut it all the way through.

Season with salt, pepper, and pepper flakes.  Spread the mixture blended in the food processor evenly all over the pork.

Preheat the oven to 400 degrees

Roll it up and tie it in a few places with some kitchen twine.

Place it on a rack in a roasting pan.

Once the oven is preheated, add the wine and water at the bottom of the roasting pan and place it in the oven. Roast the pork for about 1 hour and 15 minutes.  Make sure the internal temperature reaches 155 degrees.  Allow it to rest for 15 minutes.  Drain the wine sauce to remove any excess fat.

When ready to serve, slice the pork and drizzle over the wine sauce over the pork.

If you don’t eat pork, you can use either beef or chicken breast.  I am sure it will turn as delicious as mine.
