Smoked Salmon Frittata for a perfect Mother’s Day brunch

My kids treat me and my mom with such a beautiful brunch this past Sunday as a Mother’s Day treat.  One of the highlights of their menu was their delicious smoked salmon frittata.

The leftover was even tastier

I managed to steal some pictures while my daughters were cooking.

My mom and I had an awesome day and we appreciated that our girls went above and beyond to make us feel appreciated.

Here is the recipe for the smoked salmon frittata.

Ingredients

1 package of 10 oz.Smoked salmon

About 2 cups of fresh baby spinach

1 tbsp extra virgin olive oil

1 large onion diced

1 small green bell pepper diced

1 small red bell pepper diced

2 tomatoes diced (or ½ cup cherry tomatoes)

2 scallions diced

6 eggs

½ cup heavy cream

½ tsp pepper flakes

1 tsp roasted garlic and herb powder

1 tsp Rosemary garlic powder

Salt and pepper

Preparation

In a skillet, co heat the olive oil over medium heat.  Cook the onions, tomatoes, green and red bell peppers for about 2 minutes.  Add the scallion, then the spices.

Then add the smoked salmon.

Add the spinach and cook for another 2 minutes until it begins to wilt.  Adjust the seasoning to taste.

Preheat the oven to 375 degrees F.

In a bowl, beat the eggs.  Add the heavy cream.

Pour the eggs over salmon mixture.  Transfer to a baking dish.

Bake for 25 minutes or until the frittata is set.

As you can see, my girls did not add cheese to their frittata but it was the most delicious one that my mom and I ever had.
