Last night, I hosted our New Year Bookclub meeting. We discussed the terrific memoir “Educated” by Tara Westover. It’s such a joy to toast the new year with great friends while discussing a great book.
As you know, book club discussion needs delicious snacks and wine. What better choice than roasted shrimp to spice up our night.
Roasted Shrimp with Bang Bang sauce
Ingredients
- 1 lb. of Shrimp
- 2 tsp of powdered garlic and parsley
- 1 tsp of Paprika
- 1 Tbsp of Olive Oil
- Salt and Pepper, to taste
For the sauce:
- 1/3 cup of Mayonnaise
- 1/3 cup of sour cream
- 2 Tbsp of Plain Greek Yogurt
- 1 Tbsp of Honey Sriracha
- 1/3 cup of Sweet Chili Sauce
- Salt and Pepper
- 3 scallions chopped
Preparation
To make the sauce, stir together the mayo, yogurt, Honey Sriracha, chili sauce, salt, and scallions, cover with some plastic wrap and pop it in the fridge for a bit.
Thaw the shrimp. Preheat the oven to 450 degrees. Toss the shrimp with the oil, granulated garlic, paprika, salt, and pepper, lay on a single layer and pop them in the oven for about 5 minutes.
Remove from the oven and serve alongside the sauce.
Cheers to reading, good food, and great company
