Roasted Broccoli Salad for a Rainy Sunday

It’s a rainy Sunday, the perfect time to be lazy.  For dinner, we had some fried plantains and turkey.

I also made this delicious roasted broccoli salad that I saw on TV the other day. Of course, I twisted the recipe and made my way.

Roasted Broccoli Salad

Ingredients

2 bunches broccoli

1 red onion, cut into thin wedges

1 tbsp extra virgin olive oil

Salt, pepper, pepper flakes

1tbsp dried parsley

½ cup of sour cream

2 tbsp mayonnaise

3 tbsp milk

1tsp sugar

1 tsp paprika

Preparation

Separate the broccoli.  In a bowl, toss the olive oil, the broccoli, onions, salt, pepper, and pepper flakes.

Transfer to a baking sheet and roast them for about 15 to 20 minutes. Let them cool.

In a bowl, combine the sour cream, mayonnaise, and milk.  Season with salt and pepper, sugar, paprika, and dried parsley.  Add the broccoli to the dressing and mix well.

Transfer to a serving bowl and decorate with dried parsley.

An extraordinary life is made of simple moments with loved ones.  My family and I had a great Sunday, a beautiful tablescape, a simple dinner, and a lot of laughter.  I am blessed to have my girls with me and we did nothing but talk, laugh, and eat which is all we need right now.

  1. Broccoli is really healthy and can be also really tasty. I never used it in a salad before but I will definitely do it now!

  2. I have to try this recipe. I saw some broccoli at the farmer’s market today but I opted for cauliflower. I will go back tomorrow to get some so I can try your salad recipe. It looks so delish!

  3. Is it weird I really love broccoli? I had it recently grilled with a little shave of hard cheese and oil with lemon and it was absolutely amazing! This looks pretty tasty too, I’ll give it a try soon!
