Pecans Lemon Poppy Seed Cupcakes

One of the best things about the holiday season is baking cookies with my children.  Today is no different. The house is filled with the scent of delicious cookies and the radio is blasting our favorite Christmas songs.

My older daughter, the baker, was in charge of the Christmas sugar cookies while my younger one was adding her personal touch to some simple lemon poppy seed cupcakes.

These simple moments are so precious and bring so much joy and I don’t take anything for granted.  I love my kids and, once again, I am blessed to spend my favorite time of the year with them doing what we love.

 

This is how my Yanah made her pecan lemon poppy seed cupcakes

 

Ingredients

1 box of lemon poppy seed muffin mix

¾ cup of water

¼ cup of vegetable oil

2 eggs

½ cup of pecans

Holiday Sprinkles

Preparation

Heat oven to 425 degree

Place the paper baking cup in a 12 piece muffin tin

Stir muffin mix, water, oil, eggs, and the pecans in a mixing bowl.  Divide the batter amongst the muffin cups and bake them for 15 minutes.  Let them cool for 5 minutes and squeeze the glaze packet on top of the cupcakes and add the sprinkles to decorate.

  1. I love baking and sharing the final products with my family. My MIL loves anything lemon, so I bet these would be a hit with her. The addition of pecans is interesting, but I’m sure it adds a fun crunch to the cupcakes!
