One of the many advantages of working from home is enjoying lunch with my children whenever they are around.  Today, d my older one did not have work, and we both decided on having egg salad for lunch.  It’s simple, quick, and delicious.

After a stressful meeting, sharing a delicious lunch with my daughter makes a huge difference in my workday.

Simple Egg Salad

Ingredients

4  eggs

¼ cup Mayonnaise

1 Tbsp Sour cream

1 Tbsp Dijon Mustard

1 Green onion finely diced

1 tsp Garlic powder

1 tsp Onion powder

1 tsp Pepper flakes

1 tsp Parsley flakes

Salt and Pepper to taste

Preparation

Place the eggs in a pan, cover with cold water.  Bring water to a boil.

Remove from heat and let the eggs stand in the hot water for 10 minutes, then peel them.  Place them in a bowl, chop them.  Add all the spices.

Then add the sour cream, the mustard, and the mayonnaise.  Stir and serve.

I hope your day was great and mostly hope you were able to enjoy lunch.

  1. OMG! This looks really delicious. I love egg sandwich and it’s actually my favorite. I would love to try your version. I have never tried it with mustard and parsley.

Anyway, heading out now to make one! Haha! Your post made me really hungry.

  2. I never thought I would be excited about making an egg salad, but now I am! The one I was shown to make, by my family, was always very basic – eggs, mayo, pickles, salt, and pepper. However, yours actually sounds exciting! I would have never added mustard and sour cream to it, but it makes absolute sense, and it has a lighter feel! Blessings!

  3. I love the addition of sour cream! I’m sure that adds a delicious tanginess to the mix. I’ll give this one a try!

  4. I love egg salad sandwiches! I’ve never put sour cream in it, though. I’ll have to give that a try next time I make it. You also use more seasonings, mine is just mayo, mustard, salt, and pepper with the eggs!

  5. Who doesn’t love egg salad sandwiches? I’ve never tried egg salad with sour cream, I’ll give it a try since it sounds so delicious!

  6. This looks super yummy! I love egg salad with crackers. I can make this as a quick snack or an appetizer. I’ve never had egg salad with sour cream. I’m anxious to try.

  7. This egg salad sandwich looks delicious, healthy, and easy to make. My egg salad only has eggs, Mayo, and salt. I will add some of your ingredients next time to see if my little ones like it,
