It’s a beautiful Sunday although I am still longing for warmer weather. For dinner, we all voted for fish, therefore, I made Parmesan herbed tilapia which I paired with Lemon Orzo Salad and steamed broccoli.
Until the volleyball season is over for my younger one, dinner will be simple, quick, and delicious.
Lemon Orzo Salad

Ingredients
½ cup lemon juice
1 Tbsp lemon zest
¼ cup Extra Virgin Olive Oil
¼ cup chopped parsley
¼ cup chopped chives
2 Tbsp chopped mint
¼ tsp red pepper flakes
One 1 lb. box orzo cooked al dente
1 cup diced roasted red pepper
½ cup toasted pine nuts
Salt to taste
Procedure
In a bowl combine lemon juice and zest. Whisk in oils, herbs and red pepper flakes. Add orzo and roasted red pepper and toss with dressing. Let salad stand at least one hour before seasoning to taste and toss in pine nuts.
Parmesan Herbed Tilapia

Preheat oven to 425 degrees F.
Mix Parmesan cheese, parsley, paper flakes, lemon zest, salt, and pepper together
Coat tilapia fillets with extra virgin olive oil and press into the Parmesan cheese mixture.
Bake for 10 minutes

Tilapia is definitely one of my favorite fish. I love making a blacked tilapia with fresh tomatoes and avocado on top. I love pairing it with long grain and wild rice and asparagus.
