Honey Chicken

    My older daughter is unable to work due to Covid-19.  She is a speech therapist and works in the school system.  Lately, she’s been on a cooking and I am not complaining.  The other day, she made some honey chicken and it was so delicious that I decided to share it with you.

    As you are staying home during this quarantine, I hope you take the time to do something you love, something that will bring you joy and be thankful for each moment.

    Honey Chicken 

    Ingredients

    1 lb. chicken drumsticks

    2 tbsp Haitian spice (A blend of garlic, pepper, vinegar, scallions, cloves, parsley leaves)

    1 Onion

    2tsp Ginger powder

    4 cloves of garlic

    ¼ cup Honey

    ¼ cup of Soy sauce

    1 cup Chicken broth

    1 tbsp Thai red curry paste

    Red pepper flakes

    1 tbsp Caramelized onion powder

    2 tbsp of vegetable oil

    Preparation

    Season the chicken with the Haitian spice, let it rest for at least 1 hr.

    In a skillet, heat the oil over medium heat, add the chicken and sauté until they are golden brown.  Remove them from the pan, set aside.

    In the same skillet, add the onions thinly sliced, cook for 1 minute, then add the garlic, the red curry paste, the ginger powder, the pepper flakes, and the caramelized onion powder.  Cook for another minute.

    Then add the chicken stock, the honey, and the soy sauce.  Bring everything to a boil.

    Then add the chicken to the sauce.  Cook for another 15 minutes.

    My daughter was in charge, so she served this delicious honey chicken with her favorite pasta with spinach.
