My family and I are enjoying this second Sunday of December. For dinner, we decided to have homemade chipotle which turned out delicious.

For dessert, I made these delicious grilled glazed pineapples which I served with vanilla ice-cream.
Grilled Glazed Pineapple
Ingredients
1 pineapple cut into wedges
1 tbs vegetable oil or melted butter
2 tbs brown sugar
2 tbs pineapple juice or water
Preparation
Lay the pineapple wedges on a plate and brush them with the oil or melted butter
Preheat a grill pan. Place pineapple wedges on the grill pan and cook them for about 2 minutes or until they are golden brown.
Turn them over and cook the other side. Sprinkle the pineapples with the brown sugar and let melt slightly. Remove them from the pan. Deglaze the pan with the pineapple juice or water and simmer 1 to 2 minutes. Serve the reduced juice over the pineapples and the ice-cream.
Everything is better with ice-cream. I hope you enjoy this simple treat as much we did.
Grill glazed pineapples? Well, I’ve never eaten such pineapples but I’d love to have a taste. When served with ice cream, it just looks yummier!

This sounds wonderful! I usually add my pineapple to bbq sauce make a Hawaiian BBQ Chicken with it, but just grilling it and having it with ice cream sounds like a real treat!

Pineapples are my favorite fruit. I wish I could have fresh pineapples year round but there are times when they are quite pricey that it would not be feasible for my budget. If I get to find a fresh pineapple this weekend, I am going to try your recipe!
