Cucumber and Tomatoes Salad on a Rainy Fall Thursday

It’s a rainy day and I needed a little color to remind me of this summer that went too fast.  For dinner, I decided to have this fresh and colorful cucumber and tomato salad.  Although my older daughter is very picky with her salad, she loves cucumber.   We all enjoyed this salad that we paired with my lamb meatballs, and some boiled plantains.

Cucumber and Tomatoes Salad!

Ingredients

1 or 2 Cucumbers

3 Vine ripe tomatoes, quartered

1 red bell pepper cut into thin strips

1 small onion sliced

¼ cup Apple Cider vinegar

1/3 cup extra virgin olive oil

1 tsp. white sugar

1 tsp Garlic and Parsley seasoning

1 tsp lemon pepper seasoning

1 tsp dried basil

Salt and pepper

 

Preparation

Peel and slice the cucumbers into ½ inch rounds

In a small bowl, whisk together the oil, the vinegar, the dried basil, the sugar, and the seasoning. Set aside.

In a large bowl, add the cucumber, tomatoes, onions, and bell pepper, season them with salt and pepper.

Pour the dressing over and toss well

  3. This is such a light and refreshing salad! It’s a welcome change from all the decadent food we had over Thanksgiving weekend (Canadian thanksgiving happens in October 🙂
