Dried Cranberries and Pistachio Cookies

This month, for our book club meeting, we decided to have a cookies party where we each have to bring our favorite Holiday cookies.   I made my Cranberries pistachio cookies.

They are perfect for the whole holiday season.  My younger daughter and I loved having them with tea or chocolate while enjoying Christmas movies.   The ladies at the book club enjoyed them and I could not help sharing with you.

I hope you take the time to create memories with your loved ones for the holidays.  Remember the cookies are on me. Here is the recipe.

Dried Cranberries and Pistachio cookies

Ingredients

½ cup dried cranberries

½ cup pistachio

1 ½ cups All-purpose flour

½ cup of unsalted butter softened at room temperature

1/3 cup of granulated sugar

1/3 cup of brown sugar

½ tsp baking soda

½ tsp of salt

1 egg

1 tsp vanilla extract

Zest of 1 orange

Preparation

Preheat the oven to 375 degrees F.  Line the baking sheets with parchment paper and set them aside

Combine together the flour, salt, and baking soda and set them aside

Using the mixer, cream together the butter and both sugars.

In another bowl, mix the egg, orange zest, and vanilla extract.  Add to the butter mixture and mix well until they are well combined.

Add the flour mixture to the cream and mix just to combine.  Then add the dried cranberries, the pistachio, and mix just to distribute them through the batter.

Using a small ice cream scoop, drop the cookie dough 3 inches apart on the baking sheets.

Bake for 12 to 15 minutes or until they are golden brown around the edges.

Remove from oven, sprinkle with red and green sugar, then place on a wire rack to cool.

  3. cranberries and pistachio sound like a lovely combo! wanna try, I have to admit I have never come across even a similar combo, it got me very curious to try it for myself. I think these two might suit my taste pretty nicely! thanks for the weekend baing tip!
