Corn and crab beignets for the perfect Saturday Night!

We are still being cautious and staying home safely.  Therefore, every weekend, my family and I tried to do something fun together.  I thought these corn and crab beignets would be the perfect complement for our game night.

I found the recipe for these beignets in a book that my sister graciously gave me as a Christmas present.  Although, I tweaked the recipe a little bit by using a can of corn.  They came out delicious. I served them with toothpicks.

My husband and I also enjoyed some delicious homemade Bahama Mama.

 

Corn and Crab Beignets

 

Ingredients

2 cups of corn

1 ½ cup all-purpose flour

½ cup cornmeal

2 tsp baking powder

½ tsp cayenne pepper

1 tsp salt

1 cup of buttermilk

1 large egg

8 ounces lump crabmeat

Vegetable oil

In a bowl, whisk together the flour, cornmeal, baking powder, cayenne pepper, and salt.

In another bowl, mix the corn, the buttermilk, and egg.  Add the flour mixture and stir to combine.

Add the crabmeat and fold to combine.

Heat the oil in a large pot or deep fryer to 375-degree F.  Use a ½ ounce scoop, carefully place scoops of batter into the oil.  Fry, turn frequently until the beignets are golden brown, and cook through the center, 5 to 7 minutes.

Place a paper towel-lined cooling rack on a baking sheet.  Transfer the cooked beignets to the cooling rack to drain and cool slightly.

For the dip:

½ cup of mayonnaise

½ cup sour cream

1 tsp Dijon mustard

1 tbsp. hot sauce

½ tsp garlic powder

½ tsp onion powder

Salt, pepper, and parsley flakes

Add the mayonnaise, sour cream, Dijon mustard, garlic powder, onion powder, salt, and pepper to a bowl.  Mix together.  Then add the hot sauce and the parsley flakes.  Cover and chill until ready to serve.

 

Bahama Mama recipe

½ fl. ounce rum Barbancourt (or any dark rum)

½ fl. Ounce coconut flavored rum

1 fl. Ounce orange juice

1 fl. Ounce pineapple juice

½ fl. Ounce grenadine syrup

Fill a tall glass with crushed ice.  Pour all ingredients and stir in.  Decorate with orange and pineapple.

  2. This is absolutely amazing – I love corn and crab and, unfortunately, also beignets (wish they were healthier 😉 ). I think I’ll make them next Saturday – and enjoy them with a good glass of white wine 🙂

  3. Both of these sound amazing! Sadly I just found out that I am definitely allergic to seafood 🙁 But, Bahama Mama is one of my favorite drinks though I’ve never made my own so that is happening this weekend.

  5. Interesting menu for a Saturday. I’d say a snack while watching TV? I can keep the crabs and sauce. As for the drink, I might have to replace the rum, as I’m a teetotaller.
