What better way to end this beautiful holiday weekend than a nice family dinner with all our ethnic food? My brothers were visiting, and there is no Haitian gathering without our famous fried plantains. I thought it would be nice to serve them with a delicious “Chicken Moutarde” that I usually serve with toast.
Chicken Moutarde with Fried Plantain
Ingredients
2 tbs of vegetable oil
4 whole boneless chicken breasts, skinned, and cut into small strips
¼ cup seasoned flour
½ cup dry white wine
1/3 cup finely chopped shallots
1 cup heavy cream or half and half
2 tbs Dijon mustard
Salt and pepper to taste
Preparation
Using a meat tenderizer, pound chicken fillets to even and dust them with the seasoned flour
In a skillet, heat the oil over medium heat, add the chicken and sauté until they are golden brown.
Remove them from the pan and set them aside in a warm place.
Pour off the fat. Add the shallots and deglaze the pan with the wine. Reduce by half.
Add the cream and reduce until thickened.
Add the mustard to the sauce. Pour in any juices which have collected under the chicken. Add the chicken in the sauce and stir until they are coated with the sauce.
Heat through, place the chicken in the middle of 2 fried plantains and serve.
I hope you had a wonderful weekend and remember to give me some feedback on that recipe.
