Cheesy Cajun Shrimp Dip

Hosting our monthly book club meeting tonight was so much fun.   We discussed the book “Before we were yours” by Lisa Wingate. Delicious appetizers and wine made the gathering even better.  One of the appetizers that I served my guests was a delicious cheesy Cajun shrimp dip.  It was creamy with the perfect hint of spice.

Cheesy Cajun Shrimp Dip

Ingredients

1 lb. medium shrimp, peeled, deveined, and chopped

1 tbsp extra virgin olive oil

3 tbsp. white wine

1 red bell pepper chopped

4 cloves of garlic finely chopped

½ of small red onion diced

1 cup parmesan cheese

1 cup mozzarella cheese

¼ cup cream cheese

¼ sour cream

1 tsp red pepper flakes

1 tbsp Cajun seasoning

Salt and pepper

Parsley flakes to decorate

Preparation

Preheat the oven to 350 degrees

In a skillet, add the oil over medium heat.  Add the red bell pepper and the red onion, cook for about 2 to 3 minutes.

Add salt, pepper, pepper flakes, and Cajun spice.  Stir in the shrimp and the white wine, and cook until the shrimp are pink.

Add the sour cream and the cheeses.

Pour the mixture into a baking dish, sprinkle with parsley flakes.  Bake until lightly browned and bubbly.  Serve with crackers.

  2. This looks like a perfect appetizer! My mom is extremely allergic to shellfish, so this is the kind of thing I like to make for my dad whenever he comes to visit without her. I’ll have to try that next time I get a chance!

  6. I love cajun shrimp ANYTHING! but unlike normal people, I don’t prefer cheese in my dips.. yeah I’m weird like that! but do you see any other ingredient I could use instead?

    • Same as my older daughter, Elizabeth, whenever we are having tea and cheese party, I have to make something special for her.
