The girls and I were grateful to celebrate my husband’s birthday yesterday. We have learned to appreciate each other and enjoy life’s simple blessings. What better way to celebrate a birthday than with food and music?
For the appetizer, we had some Thai-style chicken, and it was delicious.
Thai-Style Chicken
Ingredients
2 lbs. boneless chicken breast
6 cloves garlic
1 large onion, quartered
3 inches ginger root, peeled and sliced
2 tsp cumin
2 tsp turmeric
¼ cup lemon juice
¼ cup peanut oil
¼ cup of soy sauce
Hot sauce to taste
Preparation
Cut the chicken into strips
Put all the remaining ingredients in a food processor and puree.
Pour one cup of the marinade over the chicken and let them sit for two hours.
Drain the chicken.
Grill them 3 to 4 minutes on each side. Serve with peanut sauce.
Peanut Sauce
1 cup of the reserved marinade
¾ cup chunky peanut butter
1/3 cup cream
3 Tbsp sugar
1 cup chicken stock
Preparation
In a small pot, mix together the marinade, peanut butter, cream, and sugar. Bring to a boil. Thin with the chicken stock as needed.
Season to taste and serve with the grilled chicken.
We had a wonderful time celebrating the man of the house and we hope you like our appetizer.

Hmmm…. it sounds like something the guys in my house would enjoy! I personally don’t care for peanut butter, but I wonder if I could replace the peanut oil with another oil then just have mine without the sauce. Because the rest of it sounds amazing to me!

Any veggie would work fine with this chicken. We had a mixed-vegetable that day which is one of our special ethnic dishes.
