Celebrating His Birthday with some Thai-style Chicken

The girls and I were grateful to celebrate my husband’s birthday yesterday. We have learned to appreciate each other and enjoy life’s simple blessings. What better way to celebrate a birthday than with food and music?

For the appetizer, we had some Thai-style chicken, and it was delicious.

 

Thai-Style Chicken

Ingredients

2 lbs. boneless chicken breast

6 cloves garlic

1 large onion, quartered

3 inches ginger root, peeled and sliced

2 tsp cumin

2 tsp turmeric

¼ cup lemon juice

¼ cup peanut oil

¼ cup of soy sauce

Hot sauce to taste

Preparation

Cut the chicken into strips

Put all the remaining ingredients in a food processor and puree.

Pour one cup of the marinade over the chicken and let them sit for two hours.

Drain the chicken.

Grill them 3 to 4 minutes on each side.  Serve with peanut sauce.

 

Peanut Sauce

1 cup of the reserved marinade

¾ cup chunky peanut butter

1/3 cup cream

3 Tbsp sugar

1 cup chicken stock

Preparation

In a small pot, mix together the marinade, peanut butter, cream, and sugar.  Bring to a boil.  Thin with the chicken stock as needed.

Season to taste and serve with the grilled chicken.

We had a wonderful time celebrating the man of the house and we hope you like our appetizer.

  1. Hmmm…. it sounds like something the guys in my house would enjoy! I personally don’t care for peanut butter, but I wonder if I could replace the peanut oil with another oil then just have mine without the sauce. Because the rest of it sounds amazing to me!

    • Any veggie would work fine with this chicken. We had a mixed-vegetable that day which is one of our special ethnic dishes.
