After being on a roller coaster of hectic events for these past 2 weeks, my family and I can finally sit down and breathe.
Last night, out of nowhere, my younger daughter said she would like to have some chili. She also wanted some fried Oreos with ice-cream for dessert. I made her wish come true and we had a “Chili Saturday Night. I am so glad to be able to enjoy those simple pleasures like cooking, spending quality time with my loved ones, blogging. Here is my chili recipe, hope you enjoy it.
Chili Recipe

Ingredients
1 lb. ground beef
1 large onion, diced
1 red bell pepper, diced
1 jalapeño pepper finely chopped
4 cloves of garlic, minced
2 tablespoons of chili powder
2 teaspoons of ground cumin
1 tablespoon of brown sugar
2 tablespoons of tomato paste
1 teaspoon paprika
1 teaspoon of dried oregano
3/4 cup of red wine
1 cup of beef stock
1 can chopped tomatoes
1 can of red kidney beans, drained and rinsed
2 tablespoons of olive oil
Salt and pepper, to taste
Preparation
In a large pot over medium-high heat, cook together ground beef, chopped bell pepper, onion, jalapeño, and garlic. Season with salt and pepper and cook for about 10 minutes.
Add the wine, chili powder, cumin, brown sugar, tomato paste and oregano and give it a nice stir. Cook for about 2 minutes. Add the chopped tomatoes, kidney beans, and beef stock and bring to a boil. Reduce the heat to medium-low and cook for about 45 minutes.
Taste for seasoning and serve with some sharp cheddar shredded and parsley flakes over the top.

I love Chili on cold days! I’ve never heard of putting red wine in it though! Sounds delicious!

Chili is one of my favorite winter recipes! This is very different from my recipe, but also sounds delicious. And I would LOVE a deep-fried oreo!!

Chili is such a nice treat to have from time to time, I generally don’t make it often as both my husband and I have completely different views on what a good chili is hahaha but we love it when we do make it. I will talk to him about making this one the next time we are craving it.
