Wrapping up the year with some sweet chicken drumsticks

For me, nothing is more special than celebrating New Year ‘s Eve with my family at home and reminiscing about everything that happened to us in 2019. Of course, the music and the food made the night even more beautiful.  Some delicious sweet chicken drumsticks were at the center of our table.

It was a perfect night, and I would not change anything about it.  Being home with my loved ones and celebrating each other is the perfect way to end the year. We are now ready to start 2020 with love and appreciation.

Here is how I prepared my sweet baked chicken drumsticks

Ingredients:

2 tbsp Haitian spice ((A blend of garlic, pepper, vinegar, scallions, cloves, parsley leaves)

¼ cup balsamic vinegar

¼ cup honey

¼ light brown sugar

2 tbsp. soy sauce

6 garlic cloves, minced

1 tbsp. minced fresh ginger

½ tsp black pepper

1 tsp pepper flakes

8 chicken drumsticks

1 tbsp. everything bagel

1 tbsp. fresh parsley

Preparation

Clean the chicken and season them with my homemade spice. (This is optional)

In a medium bowl, whisk together balsamic vinegar, honey, brown sugar, soy sauce, garlic, ginger, everything bagel, parsley, and black pepper.

Pour into a large Ziplock bag and add chicken drumsticks. Shake to coat chicken and refrigerate for at least 8 hours.

Preheat oven to 400°F. Line a baking sheet with foil and place a cooling rack on top.  Remove the chicken drumsticks from the bag, reserving the marinade, and place them on the rack. Bake them for 30 minutes.

While the chicken is baking, place the leftover marinade in a small saucepan. Bring the marinade to a boil, then reduce the heat to a slow simmer. Cook over low heat, stirring as needed, for about 15 minutes or until thickened.

After 25 minutes, remove the chicken from the oven and coat them with the marinade.  Return them to the oven and cook for another 15 minutes.

Coat them with any remaining marinade before serving.

  3. It’s my first time to read about Haitian spice, looks tasty! Our tradition every New Year’s Eve is to gather as a complete family and just wait for midnight before eating meals.

  5. We had wings for Christmas dinner this year! It’s my husband’s birthday as well so he always picks the big dinner. These are very different than what we did, but they also sound delicious! We spent New Year’s Eve at a beach condo on South Padre Island (almost in Mexico) along the Texas Gulf Coast. It was a bit chilly for the beach but my boys didn’t care and the guys all did a polar plunge while we were there!
