Today my girls told me they would be making dinner. I was happy and, of course, I let them surprise me. When I was finally allowed in the kitchen, proudly, my younger one said that we were going to have breakfast for dinner. I am not sure who enjoyed this night the most, my girls for making their chosen dinner or myself for sharing this precious moment with them.
Please allow me to share Yanah and Youricka’s dinner menu with you: homemade pancakes, hash brown patties, and scrambled eggs with spinach, tomato, and feta cheese.
This is how they prepared their scrambled eggs with spinach, tomatoes, and feta cheese
Spinach about 1 cup
¼ heavy cream
2 tables Feta cheese
Olive oil, salt, and pepper
Whisk the eggs and cream together. Season with salt and pepper.
Preheat a large nonstick skillet over medium heat. Add the oil. Sauté the tomatoes, add the spinach. Cook for about 2 minutes. Add the eggs mixture. Add 1 spoon of Feta cheese. Scramble eggs with a wooden spoon. Do not cook eggs until dry. Remove from stove and garnish with remaining of feta cheese.
Knowing both of them were in the kitchen was priceless especially since we are trying to hold on to time as my older one has to go back to NJ for her last semester in college.

Sounds like breakfast for dinner. Everyone’s favorite food. I would have enjoyed that having dinner at breakfast. It’s the wholesome meal for me. Wish I could try that someday. Feeling little jealous. No offense.

This looks delicious! We do breakfast for dinner a lot! We usually have pancakes or waffles with eggs and sausage. I have done biscuits and gravy for dinner to though!

When we have really busy days, my family and I have an “all day breakfast.” Basically that is scrambled eggs, bacon, sausages, and lunchmeat, and more eggs. 🙂 We are not picky eaters. As long as the food is filling, we’re good.

I LOVE breakfast for dinner. French breakfast, American breakfast, German breakfast, Mexican breakfast… they all work great. Even better if your girls make it for you!

looks delicious and mouth-watering.. Wish I could grab a plate and sit on the table. Our family prefers eating simple and breakfast for dinner is just the thing we do when we think of simple. Filling and healthy!

I’m feeling hungry now! I love having breakfast for dinner! It’s filling and easy to make too. I’ve not tried adding feta cheese to the scrambled eggs. I’l give this a go when I have breakfast for dinner next!
