Menu: Pasta, Buttery Garlic Green Beans, and my Special Herbed Fish
Herbed Fish Recipe:
1 lb. fish fillets
2 tablespoons olive oil
Herbs: (parsley, Rosemary and garlic powder, basil leaves)
Salt, pepper, lemon zest
– Cut fish into 4 serving pieces.
– In a skillet, heat oil over medium heat.
– Mix herbs, bread crumbs, salt, pepper, lemon zest. In another dish, beat egg with dried parsley and pepper. Dip fish into egg, then coat with herb and bread crumbs mixture.
– Reduce heat to medium-low. Cook fish in oil 8 to 10 minutes, turning once, until fish flakes easily with a fork and is brown on both sides.
