Strawberry Salad for a Perfect Summer Brunch

Brunch time with my family is one of the best parts of our weekends.  It’s just us being lazy on either Saturday or Sunday, where we eat, listen to music, and talk.  For these endless talking times, dessert is a must.  I prepared this delicious strawberry pretzel salad that I got the recipe from my friend Christine.

Of course, I tweak her recipe and make it my own.   Here is how I prepared it.

Ingredients

8oz of cream cheese, softened to room temperature

2 cups diced strawberries

1 cup of chopped pretzel

1 cup of chopped pecans

½ cup of brown sugar

½ cup of white sugar

½ cup of melted butter

1 tsp cinnamon

1 tsp of vanilla

1 tsp of lemon zest

1 tbsp of anisette liquor

Preparation

Preheat the oven to 400degrees F

In a bowl, mix together the chopped pretzels, chopped pecans, brown sugar, and melted butter.

Then spread them on a baking sheet and bake for 8 minutes.  Remove from the oven, let it cool, and break into small pieces.

Mix together the cream cheese, white sugar, vanilla, cinnamon, anisette liquor, and lemon zest.  Place in refrigerator

Dice the strawberries.

Stir together the diced strawberries, sugared pretzels, and pecans into the cream cheese mixture.

Decorate with strawberries, mint leaves, and lemon zest.

I genuinely hope that you take time to enjoy the summer, it’s almost over, so remember to make each day count, and treat your loved ones with this delicious recipe.

Until next time, Marjie
