Fall Sundays are the best time for me to be creative in my kitchen and treat my family with those wonderful recipes. Tonight, we started our dinner with a simple and delicious Spicy Cajun Shrimp Soup. Shrimp makes everything better, and this soup was the highlight of our Sunday. As a shrimp-lover, I may be biased, but this recipe is super delicious and wish you could taste it. Bon Appetit!
Spicy Cajun Shrimp Soup
2 tablespoons Extra virgin olive oil
1 Tbs all-purpose flour
1 celery, thinly sliced
1 medium onion, chopped
1 green bell pepper, chopped
3 green onions, thinly sliced
3 garlic cloves, minced
1 can cream-style corn
1 cup heavy cream
3 tomatoes diced
¼ teaspoon white pepper
¼ teaspoon cayenne pepper
1 Tbs Cajun seasoning
Hot pepper sauce
½ lb. cooked small shrimp
Minced fresh parsley
Heat the oil in a heavy saucepan over medium heat., add the garlic, cook for 1 minute. Then add the celery, onion, green bell pepper, and green onions; cook and stir for 5 minutes. Add the Cajun seasoning, the hot pepper sauce, and the cayenne pepper.
Carefully add the flour and stir. Reduce heat to low. Add the cream of corn and the heavy cream; bring to a boil. Season to taste. Reduce the heat; cover and simmer for 15-20 minutes. Stir in shrimp last.
Decorate with minced fresh parsley before serving. (I use dried parsley).
