Yesterday was my younger daughter Yanah’s birthday. For breakfast, I made pecan pie muffins, her favorite. I still cannot believe she is 13 and taller than me. My older one came to spend the weekend with us and I was so blessed to have both of my babies with me.
These muffins were delicious and simple to make. I hope you enjoy this recipe.
Pecan Pie muffin
Ingredients
1 cup chopped pecan
1 cup brown sugar
½ cup all-purpose flour
2 eggs
1 1/3 sticks butter melted
Nonstick cooking spray
Preparation
Preheat the oven to 350 degrees F. Place the muffin paper liners in the muffin cups and spray with nonstick cooking spray
In a large bowl, combine the pecans, sugar and the flour.
In a separate bowl beat the eggs until foamy. Add the melted butter and stir to combine. Pour the egg mixture into the dry ingredients, stirring until moistened.
Spoon the batter into the cups, filling each almost full. Bake until a knife comes out clean when inserted in a muffin, about 20 minutes.
We had a wonderful time celebrating my little one, and I am blessed to have an extra hour this weekend to sleep.
