Orange Almonds Cake

This year has been challenging for many. For me, these challenges have shown me that I already have what really matters: my family. I am thankful for them, my health, and I am particularly thankful for all of you my friends that have always come back to my website.

For Thanksgiving, I celebrated quietly with my loved ones and we started our day with a delicious brunch.  The highlight of our brunch was that beautiful almond orange cake.

It’s delicious, colorful, and perfect for our small gathering.  I could not help sharing my cake virtually with you.  Wherever you are, be safe and remember that I am grateful for you.  Happy Thanksgiving!

Orange-Almonds Cake

Ingredients

2 sticks of butter

1 ½ cups of sugar

3 eggs

1 cup of orange juice

2 cups of flour

2 tsp baking powder

1 tsp nutmeg

1 tsp cinnamon

½ tsp salt

Zest of 1 orange

1 tbsp of vanilla extract

2 tbsp of  Bourbon

½ cup almonds

Preparation

Preheat the oven to 350 degrees F

Spray a pan with non-stick spray

Using a mixer, cream the butter, and the sugar.

Add the eggs one at a time and beat well after each.

Add the orange zest, vanilla, bourbon, and beat for about 8 minutes.

Add half of the flour

Add the juice

Mix the salt, baking powder, cinnamon, and nutmeg to the rest of the flour and add to the cake mixture.  Beat on low for another 2 minutes.

Add the almonds to the batter and fold.

Transfer the batter to the prepared cake pan.

Bake for 45 minutes.  Remove from oven and let cool

For the glaze, I melted the orange marmalade in a saucepan and added 1 tbsp. of Bourbon and 1 tbsp. of water.  I poured it over the cake and decorated it with slices of oranges and cinnamon sticks.

  1. The cake is gorgeous! We had a very small Thanksgiving as well with only my in-laws who we see daily. We rented a beach house in Galveston and spent a few days there relaxing.

  4. sad to say cant have it..need to avoid it due to my health condition…..but soon i get better i will ask my daughter to bake it for us.n will keep the recipie thanks
