One of the many advantages of working from home is enjoying lunch with my children whenever they are around. Today, d my older one did not have work, and we both decided on having egg salad for lunch. It’s simple, quick, and delicious.
After a stressful meeting, sharing a delicious lunch with my daughter makes a huge difference in my workday.
Simple Egg Salad
Ingredients
4 eggs
¼ cup Mayonnaise
1 Tbsp Sour cream
1 Tbsp Dijon Mustard
1 Green onion finely diced
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Pepper flakes
1 tsp Parsley flakes
Salt and Pepper to taste
Preparation
Place the eggs in a pan, cover with cold water. Bring water to a boil.
Remove from heat and let the eggs stand in the hot water for 10 minutes, then peel them. Place them in a bowl, chop them. Add all the spices.
Then add the sour cream, the mustard, and the mayonnaise. Stir and serve.

I never thought I would be excited about making an egg salad, but now I am! The one I was shown to make, by my family, was always very basic – eggs, mayo, pickles, salt, and pepper. However, yours actually sounds exciting! I would have never added mustard and sour cream to it, but it makes absolute sense, and it has a lighter feel! Blessings!

I love egg salad sandwiches! I’ve never put sour cream in it, though. I’ll have to give that a try next time I make it. You also use more seasonings, mine is just mayo, mustard, salt, and pepper with the eggs!
