Yesterday, after working at the hospital, instead of going grocery shopping, I decided to drive down the shore with my younger daughter. I am that kind of mother, spontaneous and willing to do any unplanned and fun activities with my children. Needless to say, this morning, I did not have much in my pantry to make our usual sumptuous breakfast. I had leftover salmon, milk, cheese, eggs, and scallions, so I used them to make us a delicious Salmon’s Frittata.
After all, cooking is not complicated, use whatever you have on hand to make a feast in your own kitchen. Soon, you will realize, your best dishes are created with the simplest ingredients.
Marjie’s Salmon Frittata
Leftover baked salmon
¼ cup milk
1 chopped scallion
1 tbsp extra virgin olive oil
½ tsp paprika
1 tbsp dried parsley
½ tsp pepper flakes
Salt and pepper
Shred the salmon and season with pepper flakes
In a skillet, cook the scallion in the oil over medium heat for about 1 or 2 minutes. Add the shredded salmon, parsley, and pepper flakes.
In a bowl. whisk together the eggs, milk, half of both kinds of cheese, paprika, salt, and pepper. Add the eggs to the salmon mixture. Cover the skillet with a lid and cook until the frittata is about 3/4 of the way cooked through. Meanwhile, preheat your broiler.
Sprinkle the rest of the cheese over the top, place the frittata under the broiler and cook until the top is a deep golden brown.

We made a frittata once with a bunch of leftover veggies from other meals. I never thought of adding meat into it, this sounds great! And I’m sure it was very filling, too.
I usually add spinach or any other veggies, but I did not have yesterday, Stephanie, and it turned great with the salmon.
I love healthy and veggie foods and I think that food looks delicious! I will try cook that one!
