On this beautiful Fall-Sunday, I decided to make a delicious quiche for my family. Breakfast on Sundays is one of the simple pleasures that fills my heart with joy. Although, it’s been hard lately; my older daughter is not here, she is finishing her senior College year in New-Jersey. It’s just the three of us. I am grateful for Skype and facetime which brings her closer.
Here is the recipe for my quiche.
Marjie’s Quiche
Ingredients
1 pie crust
6 eggs
½ cup cream
½ cup mozzarella cheese
1 bell pepper
1 white onion
1 tomato
¼ cup green onion
Ham
Salt and pepper
1 tbsp extra virgin olive oil
Parsley flakes
Preparation
Heat the oil in a nonstick pan, cook onion, pepper, tomatoes, green onion, season with salt and pepper. Add the ham. Let it cool slightly.
Arrange the pie crust in a pie dish. Add the onion mixture.
In a large bowl, whisk eggs, cream, and the cheese. Season with salt and pepper. Pour over the pie filling. Sprinkle with parsley flakes
Bake at 375 degrees for 45 minutes or until eggs are cooked and omelet is set and pie crust is golden brown.

I ADORE quiche and yours looks beautiful! I thought I’d have to give quiche up after I went vegan, but I’ve been able to recreate a vegan version (of course not as tasty as the kind make with eggs and real cheese, but I still love it). Beautiful table setup.

Cooking is part of my self-care, I love trying new recipes. My husband and I are eating more of a vegan diet and it’s been so fun finding and trying new recipes and vegan restaurants!
