Lemon Orzo Salad

It’s a beautiful Sunday although I am still longing for warmer weather.   For dinner, we all voted for fish, therefore, I made Parmesan herbed tilapia which I paired with Lemon Orzo Salad and steamed broccoli.

Until the volleyball season is over for my younger one, dinner will be simple, quick, and delicious.

One 1 lb. box orzo cooked al dente

1 cup diced roasted red pepper

  1. I can’t wait to try this meal! I’m gluten free but sometimes I can find GF Orzo. And I love the parmesan crusted tilapia. I wanted to pin this to save the recipes to pinterest, but it didn’t work. Saved to my computer, though, for future reference!

  2. Tilapia is definitely one of my favorite fish. I love making a blacked tilapia with fresh tomatoes and avocado on top. I love pairing it with long grain and wild rice and asparagus.

  3. What a lovely Sunday dinner. Love the recipe for your Lemon Orzo Salad. I’ll have to make it this summer for one of our cookouts!
