Sunday, I also made this delicious Gingered Fruit Crisp that the kids delighted with ice cream. I wanted to go to bed early that’s why I did not have time to post it. Here is the recipe
Gingered Fruit Crisp

Ingredients:
8 cups mixed berries
1/3 cup granulated sugar
2 Tbs cornstarch
Zest of one lemon
1 ½ cups old-fashioned oats
1 cup brown sugar
½ cup all-purpose flour
1/3 cup chopped crystallized ginger
1 ½ tsp cinnamon
½ cup melted butter
Procedure
Pre-heat oven to 400 degrees F
Toss berries with cornstarch and sugar and lemon zest. Place berries in a lightly greased baking dish.
In a bowl combine all dry ingredients and ginger, mix well. Add melted butter and mix to create a streusel. Sprinkle streusel over berries and bake for 20-25 minutes. Cool slightly before serving with ice cream.

This is such a quick and yummy recipe and I love my desserts with a scoop of icecream. It tastes heavenly.
