Sunday, I also made this delicious Gingered Fruit Crisp that the kids delighted with ice cream.  I wanted to go to bed early that’s why I did not have time to post it.  Here is the recipe

Gingered Fruit Crisp

Gingered Fruit Crisp

Ingredients:

8 cups mixed berries

1/3 cup granulated sugar

2 Tbs cornstarch

Zest of one lemon

1 ½ cups old-fashioned oats

1 cup brown sugar

½ cup all-purpose flour

1/3 cup chopped crystallized ginger

1 ½ tsp cinnamon

½ cup melted butter

Procedure

Pre-heat oven to 400 degrees F

Toss berries with cornstarch and sugar and lemon zest.  Place berries in a lightly greased baking dish.

In a bowl combine all dry ingredients and ginger, mix well.  Add melted butter and mix to create a streusel.  Sprinkle streusel over berries and bake for 20-25 minutes.  Cool slightly before serving with ice cream.

    • Yesterday, my daughter wanted us to have Tuesday Nachos and I did not. Veronica, I will check your recipe and will make nachos on Friday.

  1. I’ve discovered as I get older that I actually REALLY like ginger in things! I must’ve been missing out all this time. This recipe looks great, thanks for sharing it!

  2. It looks yummy ? and I am hungry already. I love berries so this recipe is perfect for me. I don’t really like sweet so maybe I will remove the sugar from the ingredients next time I try the recipe.

  3. What a delicious treat, Marjie! Adding ginger is a very creative twist! I’ve always liked ice cream but became a real fan during my pregnancy, and this is a lovely way to eat it!

  4. Sounds like a real must try! I have not had ginger with dessert but this looks so delicious I can’t wait to make it. Thanks for the recipe!

  5. That really looks amazing. I think I would like to try this out although maybe with a different berry instead of strawberry. Or maybe use something else like apples. My daughter would love it.
