Sunday dinner is always a special gathering in my family. This is the only day all of us, except my older one finishing school in NJ, gather together around a nice meal and spend some quality time together. This is why I always make sure to come up with something delicious to treat my family.
Today I started our dinner with a simple cucumber and onion salad which I served on martini glasses. This fresh salad was followed by some spicy Mexican rice and BBQ chicken. I am only sharing the cucumber and onion salad recipe with you and wish you could taste mine.

Cucumber and Onion Salad
Ingredients
3 cucumbers, halved lengthwise, seeded and thinly sliced crosswise
½ cup sour cream
2 tablespoons mayonnaise
Zest and juice of 1 lemon
2 tablespoons chopped fresh dill
½ cup thinly sliced red onion
Salt and ground black pepper, to taste
Preparation
Mix sour cream, mayonnaise, lemon zest and lemon juice, and dill together in a mixing bowl.
Add cucumbers and onion; stir to combine.
Season with salt and black pepper.

This is such a simple but YUMMY recipe. We like to have this kind of salad for a side as well. There’s a Polish recipe for cucumber salad that’s very similar, except it doesn’t use mayonnaise. Growing up, since my mother wasn’t into sour cream, we just used the mayonnaise (it’s also delicious this way). Love your recipe ideas!

This is my all time favorite. Simple and easy ingredients. Quite a summer salad. Added benefit for me is that my son loves it. He can eat it anytime without giving me trouble.

Oh yum! I love cucumber and onion salad! I’ve never had one with mayo – I usually use a balsamic vinegar for dressing and add tomatoes. Sounds like a really good summer recipe!

My younger did not love cucumber, now, she will just take them from the fridge and eat them.
