Sunday dinner is always a special gathering in my family.  This is the only day all of us, except my older one finishing school in NJ, gather together around a nice meal and spend some quality time together.  This is why I always make sure to come up with something delicious to treat my family.

Today I started our dinner with a simple cucumber and onion salad which I served on martini glasses.  This fresh salad was followed by some spicy Mexican rice and BBQ chicken.  I am only sharing the cucumber and onion salad recipe with you and wish you could taste mine.

I hope you had a wonderful weekend and remember to take a minute to show appreciation to your loved ones.

  1. This is such a simple but YUMMY recipe. We like to have this kind of salad for a side as well. There’s a Polish recipe for cucumber salad that’s very similar, except it doesn’t use mayonnaise. Growing up, since my mother wasn’t into sour cream, we just used the mayonnaise (it’s also delicious this way). Love your recipe ideas!

    • Margaret, I would love to have your recipe. I haven’t made any Polish food yet, yours could be my first one.

  2. Delicious! Would I have even thought about cucumber and onion salad? Such a quick one. I love mayonnaise and would love to try the mix with lemon juice.

  3. Yummy, it looks delicious! I bet it’s creamy, crunchy with the right amount of sourness. I am definitely making this. Would love to add mint and a few slices of jalapeño!

  4. This is my all time favorite. Simple and easy ingredients. Quite a summer salad. Added benefit for me is that my son loves it. He can eat it anytime without giving me trouble.

  5. This looks like such an easy recipe, and I bet my husband would love it! I personally can’t stand cucumbers, but he loves them so is always looking for a new way to eat them.

  6. Oooooo how yummy is this salad?!?! I’m all about salads in the summer. They make the perfect meal. So need to give this a try

  7. What a great recipe for summer! Cucumbers! Seriously how easy this is to make as well and most of the ingredients one would have in their pantry/fridge already. Love it!

  8. Love love love the cucumber onion salad with shrimp. Will definately make it for the next time I’m hosting “Ladies Night” in my home. I’m sure it will go great with a nice glass of white wine!
