Corn casserole with smoked ham

There is something about cooking that brings me so much joy that I am always on adventure mode in the kitchen.    I have shared my corn casserole recipe with you before.  Last night, I decided to give it another twist and take it to the next level.  The dish turns out so good that I could not help sharing it with you.   I only added a few new ingredients and I could not believe how delicious it was.  Enjoy the recipe!

Ingredients

1 lb. smoked ham

2 cans of whole kernel corn, drained

2 cans of cream of corn

2 8-ounce package corn muffin mix

1 stick of unsalted butter, melted

8 oz. cream cheese

1 cup sour cream

6 scallions, chopped

2 cups of cheddar cheese, shredded

2 or 3 tbsp of chives, finely chopped

Dried parsley flakes

 

Preparation

Preheat the oven to 325 degrees – Lightly grease the baking dish

Dice the ham

Stir together the whole kernel corn, cream of corn, corn muffin mix, cream cheese, and melted butter in a bowl.  Stir in the ham and the scallions until everything is combined well.  Pour into the baking dish.  Sprinkle the chives evenly. Bake for 45 minutes or until golden brown.

Remove from the oven and top with the Cheddar cheese and dried parsley.  Return to oven for 10 minutes or until the cheese is completely melted.  Let stand for 5 minutes at least, serve warm.

  1. Corn casserole with smoked ham, now that sounds really delicious. I have never had this before and as someone who loves trying out new recipes, I will try this one out. You sure made it look so easy to prepare. It looks mouth watering and I’m sure my kids would love it.
