Chickpea salad

It’s a rainy Wednesday afternoon, perfect for a cozy dinner, unfortunately, my kids are away and I was too comfortable to cook anything for myself.  I decided to make a simple chickpea salad which I paired with some leftover baked chicken.   Although simple, this salad was delicious and filling.

Chickpea salad

Ingredients

1 15 1/2-ounce can chickpeas, rinsed, drained

½ bell red pepper

2 tsp dried basil

1 tbsp chopped fresh Italian parsley

2 tbsp fresh lemon juice

1 tbsp extra-virgin olive oil

1 small garlic clove, pressed

1/3 cup Feta cheese

1tsp honey sriracha seasoning

Salt and Pepper

Preparation

Combine the chickpeas, the red pepper, the basil, the chopped parsley, fresh lemon juice, extra-virgin olive oil, the pressed garlic clove, and the honey sriracha in a medium bowl. Add the Feta cheese and toss gently to blend all ingredients thoroughly. Season the chickpea salad to taste with salt and freshly ground black pepper.

It can be served chilled or room temperature.

  4. I have a can of chickpeas in the pantry I was going to use for hummus but I may have to try this instead. I may have to try it with fresh mozzarella because I don’t like feta cheese, but the rest of this sounds delicious!

  5. This is such a simple, nutritional dish. I love chickpeas with the feta cheese. It really does make a good snack or light lunch. I do tend to cook alone and need simple dishes like this because I don’t have much energy due to living with chronic illnesses.

  6. Chick peas are my favorite! I’m a vegetarian so I always have cans of chick peas in my pantry. Can’t wait to try this delicious recipe!
