Brie and Pepper Jack Cheese Bites

Fall is my favorite season for many reasons.  Besides indulging in comfort food, I enjoy having friends around, sitting outside, reminiscing, sipping wine, and enjoying delicious homemade snacks.  This is exactly what we did the other night.  My sister came over with her best friend and we had the time of our lives.  I made these delicious cheese bites and  I could not help sharing the recipe with you.

 

Brie and Pepper Jack Cheese Bites

 

 

Ingredients

1 sheet of Puff pastry

Strawberry jam

Brie cheese, cut into cubes

Pepper jack cheese, cut into small pieces

½ cup crumbled bacon

1 tbsp of flour

For the wash: 1 egg yolk beaten with 1 tbsp of water

 

Preparation

Preheat the oven to 400degrees F

Lightly flour a cutting board with the tbsp. of flour, roll the sheet of puff pastry.  Cut them into small squares.

Using a muffin pan, place each puff pastry square in a muffin cup.

Add 1 tsp of strawberry jam, a cube of brie, the pepper jack, and finish with 1 tsp of crumbled bacon.

 

Fold the corners and brush with the egg wash.

Bake them for 10 minutes or until they are golden brown.

  1. I absolutely adore brie, it’s my favourite cheese! I hadn’t thought about combining it in parcels before – I normally prefer it on a bacon buttie, but the bites look great to make. Something fun to make with kids too! Sim x
