I am back home after a lovely weekend celebrating my daughter’s birthday in New-Jersey. Last night, I did not cook, I had to catch up on some well-deserved sleep. So tonight, my family is looking for a lovely meal. For dinner, I made this braised brisket of beef, perfect for this beautiful Fall Tuesday.
Braised Brisket of Beef
4 lb. first-cut brisket of beef
½ cup flour
2 large cloves garlic, minced
2 Tbs cider vinegar
2 Tbs brown sugar
One 8 ounces can tomato sauce
2 Tbs tomato ketchup
1 Tbs Worcestershire sauce
1 cup boiling water
1 bell pepper
2 Tbs Vegetable oil
2 bay leaves
Salt and freshly ground black pepper
Combine flour, salt, and pepper. Wipe brisket with a paper towel. Dredge meat in the seasoned flour.
Heat the oil in a large roasting pan with a cover. Brown the meat, start fat side down, on both sides to seal in the juices. Spread the minced garlic over the top. Pour vinegar over the meat, letting it drip onto the pan, then add all the remaining ingredients except the onions and the bell pepper.
Bring to a slow boil, basting the meat until the ingredients are blended. Pre-heat the over to 350degre F. cover the pan and place the oven to braise for 2 hours or until almost tender. Continue to baste occasionally, adding a small amount of boiling water as needed.
Towards the end of the braising time, add the onion and bell pepper, cover the pan and return to the oven for about 20 minutes or until the onion and pepper are tender. Adjust the seasonings. Let the meat stand 15 minutes, then slice across the grain.
Nothing brings more joy on a fall night than a warm and hearty dinner.
