Spring is almost here, and it is all about the colors which is one of the reasons I love this beautiful season. It brings hope, new joy, and new beginnings.
My younger daughter is off from school and went to NJ to see her older sister. It’s just my husband and me at home tonight. He’s grilling some ribs and I wanted to have something colorful to pair with them. I looked in my pantry and saw some tuna and some tricolor pasta which is all I need for a simple and delicious dish.
Baked Tricolor Pasta with Tuna
1 lb. of tricolor pasta
2 cans of tuna
2 tbs unsalted butter
1 small onion diced
3 cloves garlic minced
2 tbs flour
2 cups of warm milk
1 ½ cup grated parmesan cheese
Salt, pepper, parsley flakes
Fill a pan with water, bring to boil, add salt and add the pasta. Cook according to package instructions.
Preheat the oven to 375 degrees
In a saucepan over medium heat, melt the butter, add garlic, the onions, and cook until translucent. Add the flour. Stir together and cook it for about a minute. While constantly stirring, slowly add the milk and cook it for about 4 to 5 minutes. Season with salt and pepper to taste. Add the tuna and the cheese and stir. Add in the cooked and drained pasta and mix together until everything is well combined.
Transfer to the baked dish and sprinkle with more parmesan cheese and dried parsley. Bake for 25 minutes.
