It was such a beautiful Sunday after a long rainy week. For dinner, I made some baked parmesan chicken strips which I served with baked ziti, and roasted lemon garlic asparagus. I was so surprised that the kids ate all the chicken as they don’t like white meat.

I really enjoy Sunday dinner, which is our special family time, where we gather together to eat, listen to music, talk, and create memories.

Baked Parmesan Chicken Strips

Ingredients
2 lbs. boneless and skinless chicken breasts cut into long strips
1/3 cup milk
2 eggs, beaten
1 cup parmesan cheese
1 cup breadcrumbs
1 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
1 tsp dried basil
1 tsp pepper flakes
Salt and pepper
Paprika and lemon juice
Preparation
I season my chicken with salt, pepper, paprika, and some lemon juice (it’s optional)

Preheat the oven 400 degrees
In a bowl, combine milk and eggs
Combine Parmesan cheese, bread crumbs, onion powder, garlic powder, basil, parsley and pepper flakes
Dip chicken strips first in milk mixture, then toss to coat evenly in the breadcrumb-cheese mixture
Place on baking sheets and bake for 25 minutes or until golden
Roasted Lemon Garlic Asparagus
I arrange the asparagus on a baking sheet. I toss in olive oil, salt, and pepper. I roast them for 10 minutes in my preheated oven at 400 degrees F. I remove them from oven, I toss in garlic, lemon zest, and lemon juice.

I love this idea! I’ve made chicken parm before, but never thought of making it into strips and pairing it with ziti. I bet my boys would love this!
I had to make the chicken strips for my girls, as this is the only way, they will eat white meat, Stephanie, and there was no leftover.
