Baked Parmesan Chicken Strips

It was such a beautiful Sunday after a long rainy week.   For dinner, I made some baked parmesan chicken strips which I served with baked ziti, and roasted lemon garlic asparagus.  I was so surprised that the kids ate all the chicken as they don’t like white meat.

Baked Parmesan Chicken Strips

Baked Parmesan Chicken Strips

Ingredients

2 lbs. boneless and skinless chicken breasts cut into long strips

1/3 cup milk

2 eggs, beaten

1 cup parmesan cheese

1 cup breadcrumbs

1 tsp onion powder

1 tsp garlic powder

1 tsp dried parsley

1 tsp dried basil

1 tsp pepper flakes

Salt and pepper

Paprika and lemon juice

Preparation

I season my chicken with salt, pepper, paprika, and some lemon juice (it’s optional)

Chicken seasoned with salt, pepper, paprika, and lemon juice

Preheat the oven 400 degrees

In a bowl, combine milk and eggs

Combine Parmesan cheese, bread crumbs, onion powder, garlic powder, basil, parsley and pepper flakes

Dip chicken strips first in milk mixture, then toss to coat evenly in the breadcrumb-cheese mixture

Place on baking sheets and bake for 25 minutes or until golden

 

Roasted Lemon Garlic Asparagus

I arrange the asparagus on a baking sheet.  I toss in olive oil, salt, and pepper.  I roast them for 10 minutes in my preheated oven at 400 degrees F.  I remove them from oven, I toss in garlic, lemon zest, and lemon juice.

    • I had to make the chicken strips for my girls, as this is the only way, they will eat white meat, Stephanie, and there was no leftover.

  2. This meal reminds me so much of my childhood- my mom’s go-to specialities have always been chicken strips and baked ziti! I just might have to learn to cook just so I can make this for her one of these days!
