My sister was having a small gathering to say goodbye to summer 2023 and I decided to make her my favorite pasta salad. One of the advantages of any pasta salad recipe, you can add as many ingredients as you want. Today, I tried to capture the colors that remind me of summer, therefore, I went for yellow, red, and orange. This salad is creamy, and rich, with a hint of heat. After all, it’s a summertime affair, we should have some heat.
1 box of pasta
3 bell peppers (yellow, orange, and red) cut into strips
1 can of artichoke
1 cup of shredded carrots
1 can of Corn kernel
1 cup of cherry tomatoes
1 cup of parmesan cheese
1 cup mayonnaise
1 cup of sour cream
½ cup Dijon mustard
Zest and juice of a lemon
½ tsp garlic powder
½ tsp paprika
1 tsp pepper flakes
Salt and black pepper to taste
1 orange, 1 lemon to garnish (Optional)
Cook the pasta according to the box instructions and set aside.
In a large bowl, add the mayonnaise, sour cream, Dijon mustard, lemon zest, lemon juice, garlic, paprika, pepper flakes, salt and pepper and whisk until they are well combined.
Mix all the other ingredients. Pour the dressing over the pasta mixture. Toss to coat.
Transfer the salad to a serving bowl.
Decorate it with lemon and orange slices.
