A “Chili” Saturday Night

After being on a roller coaster of hectic events for these past 2 weeks, my family and I can finally sit down and breathe.

Last night, out of nowhere, my younger daughter said she would like to have some chili.    She also wanted some fried Oreos with ice-cream for dessert.  I made her wish come true and we had a “Chili Saturday Night.  I am so glad to be able to enjoy those simple pleasures like cooking, spending quality time with my loved ones, blogging.  Here is my chili recipe, hope you enjoy it.

Ingredients

1 lb. ground beef

1 large onion, diced

1 red bell pepper, diced

1 jalapeño pepper finely chopped

4 cloves of garlic, minced

2 tablespoons of chili powder

2 teaspoons of ground cumin

1 tablespoon of brown sugar

2 tablespoons of tomato paste

1 teaspoon paprika

1 teaspoon of dried oregano

3/4 cup of red wine

1 cup of beef stock

1 can chopped tomatoes

1 can of red kidney beans, drained and rinsed

2 tablespoons of olive oil

Salt and pepper, to taste

Preparation

In a large pot over medium-high heat, cook together ground beef, chopped bell pepper, onion, jalapeño, and garlic.  Season with salt and pepper and cook for about 10 minutes.

Add the wine, chili powder, cumin, brown sugar, tomato paste and oregano and give it a nice stir. Cook for about 2 minutes.  Add the chopped tomatoes, kidney beans, and beef stock and bring to a boil. Reduce the heat to medium-low and cook for about 45 minutes.

Taste for seasoning and serve with some sharp cheddar shredded and parsley flakes over the top.

    • It was a rough week for us, and it was nice to be able to have that little break by making something that my girls like.

    • Stephanie, I’ve been adding the red wine for a while. I saw them doing that in one of the shows in food network.

  2. That chili definitely has my mouth watering but can we just talk about those Oreos?? Oh my goodness, that is my literal dream dish- I think we both know what I’ll be eating all this week!

  4. Chili is such a nice treat to have from time to time, I generally don’t make it often as both my husband and I have completely different views on what a good chili is hahaha but we love it when we do make it. I will talk to him about making this one the next time we are craving it.

    • O Luna, I thought I was the only one, my husband and I have different views on so many dishes, and the worst he does not cook, hahaha.

    • We usually have fried Oreos when going to fair, and I had to please my daughter and all of us with them, Emily.
